I’m always griping about snacks, and usually i’m not a snacker (but i’m definitely a griper…) but when the hunger hits me, it hits hard. You can definitely put me in the” one of those people who gets hangry” boxes. So, in my state of being happy and full, I made a resolution to end the hanger! This means more frequent, yet small, meals throughout the day. Obviously it’s easy to grab a bag of chips and munch until sick, but i’m going to stick with the healthy way, and make more whole veggie, more healthy, more nutritious snacks without skimping on flavor.
Here is my first attempt at a “snack”. Sweet potato fries with a healthy & spicy ranch dipping sauce.
Sweet Potato Fries:
1-2 sweet potatoes, cut into slices (length wise, then cut like a fry)
salt, pepper, cinnamon
bake at 350 degrees for 20-25 minutes
1 tomatillo , cut into wedges
2 jalapeno, blistered and seeded
1/4 white onion
bunch of cilantro
2 Tablespoons buttermilk
1/2 Cup plain greek yogurt
place all ingredients in blender/food processor and blend until combined.
