I’m seriously pumped about this post. I feel like guacamole is one of the recipes people are always on the hunt for. It’s like a lifelong treasure hunt to find the perfect guacamole recipe- because there is so much to sift through to get to the good stuff. Well, let me tell you, i’ve definitely found my gold recipe and it’s the most simple recipe ever. There are so many versions of guacamole: some super creamy with sour cream, some made with salsa, some out of a packet. This recipe has none of the extra stuff. It’s just simple, straight forward and seriously bomb diggity. The only addition to this recipe (specifically for this time of year) are the pomegranates seeds. The ruby gems sprinkled over the top make this typical summer dish morph right into a perfect side to bring to any holiday potluck!
The perfect guacamole recipe: 2-4 people (this can be doubled, tripled, and ever quadrupled easily!)
2 ripe avocados
1/4 onion, minced (i’m talking really small little bits)
lots of roughly chopped cilantro
1/2 jalapeno (seeds removed), minced
juice from 1/2 lime or 1 whole lime depending on how juicy it is
Above is the order in which I add the ingredients to the bowl, and then I used a potato mashed and roughly mash everything together. Then I taste and sometimes (usually) I add more salt and a touch more lime juice and then garnish with pomegranate seeds.
