Homemade Gnocchi with Kim

Potato pasta? You would be crazy, evil and in denial if you said you didn’t enjoy a good bowl of Gnocchi. Now, I wouldn’t blame you if you said you didn’t like the store bought kind. It’s too dense and un-flavorful and just sits  at the bottom of your stomach like a brick for the rest of the night.

Recipe for Homemade Gnocchi:

2 pounds potatoes (we used yukon gold)
3 egg yolks
1 C flour
rice flour for rolling out Gnocchi
salt and pepper

Boil potatoes for about 20 ish minutes, let cool. Rice potatoes in a ricer, crack in 3 egg yolks, and sprinkle flour over everything. Then, mix all together. Make sure not to over mix, otherwise the mixture will get gummy. Roll out dough and shape on a fork and throw the little dough nuggets into a pot of salted boiling water! Take out once they rise to the top!

We ended up eating our Gnocchi like mac and cheese. We browned butter and sage, tossed in a few pieces of cheese and threw it under the broiler for about 6 minutes until golden.
